Corned Beef
Ingredients:
1kl. beef(lean)
4tsp. Coarse salt
2tsp. Sugar
1tsp. Curing salt
2c. Water
3pcs. Calamansi
cooking ingredients:
1tsp. Pepper corn
1tsp. Chopped garlic
2-3pcs. Bay leaf
2 strands oregano leaf
1c. Water
½ tsp. MSG

Procedures:
Select good quality of beef cut into 2x2 cubes.
Prepare cover picking and immerse cubes cut meat.
Cure at room temperature (8-10 hours) or 2 days in refrigerator.
Wash cured meat in running water.
Pressure cooked cured meat together with cooking ingredients for 45 minutes at 15 lbs.
Remove and flake the meat.
Dissolve 2T cornstarch in 1c broth then cook until done.
Add to the flake covered beef and mix well.
Pack in P.T (.03) and store at the freezer.
If preserving jar is used, pack in ¼ head space half seal the jar and process at in water bath for 15 minutes.
